I would love to be able to tag certain tasks that can be accomplished in 5 minutes or less. I'm sure the Tags field can handle it, but there is no multiple choice there. Any suggestions? I currently use Folders, Contexts and Starred for other purposes.

You could enable the "length" field in your account settings which will allow you to estimate the time it will take to complete a task, and allow you to sort by that time. Or you could tag them with "quick" or make a special folder or context for them.
