I just noticed that a couple of my tasks that I checked off yesterday are showing today's completion date. Why would this happen? If I check them off at night, does it round up to the next day or something?

Check your time zone in the settings area. It may be inconsistent with your system time and changing to reflect the difference.

Its also possible that if you checked them off on a mobile device that didn't sync immediately, that the recorded date was delayed until it actually synced.
