On the rare occasions (sarcastic smile) that I fall behind, I might want to change the start date and/or due date for a bunch of task and/or sub-tasks. Any way to do this other than individually editing and modifying the dates.

In any practical sense, no.
If you're desperate for work-around, and you don't already use Stars, you can star the tasks you want to postpone to a given specific date, filter for Starred, Multi-edit to the new date, then de-Star.
