Is there a way to get History AND show the date it was closed/completed?

Yes, do a search for "completed is yes" and then sort the list by completion date.

I could not find a completed date column. The list of columns presented to me are:
Folder Context Goal Start Date Start Time Due Date Due Time Repeat Length Timer Priority Tag Status Star Location Assignor Trashcan |

You can simply click on "sort", in the dark blue menu, and you'll see "Date completed" sort option. Then, the column will appear on your to-do list. Hope this helps!
