How many sort could I organize? I mean I saw that each view has its own sort function. Can you please confirm if I choose task view i could have some kind of sort different from the one of the due dates for example?

Yes, each view can have its own sort, and optionally you can have each list have its own sorting. This is an option in your account settings.
