Tweeking Completion Date

I'm interested in finding out if there is a way to tweek the completion date of a task.
I'm noticing that I don't remember everything, including adding in a task for something until AFTER I've done it... perhaps even days after. I like the idea of using Toodledo as a history of things I do, even things that are not pre-planned.
Any ideas?
